Ham and Egg Stuffed Tomato
Looking to mix up your breakfast routine? I know sometimes I end up in a rut following the same protocol; make an egg, throw whatever I have in the fridge, be it veggies or cold cuts, and viola! This looks classy and adds some extra vitamins for your long day ahead. For this one, I had some left over ham from last nights family dinner. Garlic and red onions minced added along with scrambled eggs completes the stuffing. A couple lightly cut slices of provolone, basil and parsley top it off.
