Beans: The Magical Fruit
This bean salad originated from my love of garbanzo beans. I have been making “chick pea” salads of a wide variety for a few years now.
Mango
Apple
Garbanzo beans
Black beans
Corn (canned)
Red Onion
Lemon
Olive Oil
Parsley
Salt
Pepper
- sit for an hour or frig over night. Serve at near room temp.
I used the lemon juice liberally for two reasons. The sweet fruit goes great with the sour lemon and also helps in preserving the dices fruit, making it last longer by preventing oxidation. I highly recommend trying this..
